I'm always on the lookout for Tortilla Recipes or recipes that use tortillas. If you've never had a homemade tortilla you haven't fully appreciated life.

And I'm sure I'm not the only one. So here's my top pick for Tortilla Recipes. It's also from one of my favorite sites.

Flour Tortillas

4 cups white or whole wheat flour or half each1-1/2 teaspoons salt
1-1/2 teaspoons baking powder (optional)
1/3 cup shortening
1 to 1-1/4 cups water
Waxed paper
oil (optional)


In a large bowl combine the flour, salt and baking powder.  I prefer to use the baking powder because it makes the tortillas lighter, even if you roll them a little thick.  The baking powder is not an authentic addition though, rather it is a southern mutation.  Next cut in the shortening with a fork.  When the flour is crumbly, add the water.  Stir the dough with your fork until it makes a cohesive ball of dough.  You may need to add an extra small spoonful of water if the dough is too dry.  Be careful not to add too much though.  When the dough forms a ball, knead it about 20 times.  Then let it rest in the bowl for about 10 minutes. 

After it has rested, form it into 10 or 12 equal balls.  Roll each ball in a little flour, to coat the outside of it evenly.

It's my favorite! I like to make it with half wheat/ half white flour. They are really yummy. My family loves them. I eat them for snacks with a little cheddar. yum.

Okay, it's been a while since I posted any tortilla recipes. But hopefully the wait has been worth it. lol. This recipe sounds so good and simple.

Tortilla Soup

Ingredients

2 tbsp. oil
1/2 cup onion, diced
2 cups ripe tomatoes, chopped
2 cups shredded, cooked chicken
8 cups chicken broth
Salt and pepper
1/2 cup light sour cream
1 1/2 cups mozzarella or Monterey Jack cheese, in 1/4-inch cubes
2 cups corn chips

In a deep pot, heat the oil and saute the onion and tomatoes for 3 to 4 minutes. Stir in the shredded chicken. Add the chicken broth, bring to a boil, lower the heat, and simmer, covered, about 15 minutes. Add salt and pepper to taste.

To serve, put into bowls, stir in sour cream, and top with cheese, chips and any of the garnishes suggested above. Finish with lime juice.

This is one of my kids favorite tortilla recipes. We make this one alot. It's quick and easy and we usually let everyone choose there own toppings.

Easy Pizzadillas

2 flour tortillas
1 cup spaghetti sauce
pizza toppings
2 cups mozzarella cheese, shredded
1/4 cup parmesan cheese
2 tablespoons butter
2 tablespoons oregano
1 tablespoon garlic salt
1 tablespoon crushed red pepper flakes (optional)

Place a flour tortilla on a large plate or cutting board and spread with a thin layer of spaghetti sauce (you're favorite jarred brand or leftover).
Season with oregano, garlic salt, Parmesian, pepper flakes, or whatever herbs you prefer.
Add a thin layer of shredded Mozarella cheese.
Layer your pizza toppings of choice. (I used pepperoni, thinly-sliced green peppers, and sliced black olives.).
Add another thin layer of Mozarella.
Place another tortilla on top.
Melt butter, Parmesian, oregano, and garlic salt together in a
microwavable dish.
Brush the top tortilla with the herb butter and invert onto a grill (set to low heat) with the butter side down. Brush the other side and cover the grill.
Flip the pizzadilla when the cheese is melted and the bottom tortilla is crisp.
Once the other tortilla is crisp, remove from the grill and slice into quarters with a pizza cutter.
An easy dipping sauce can be made by mixing spaghetti sauce with the leftover herb butter and heating.

Spiral Sandwiches


Kids are so proud of these elegant roll-ups that show off a food design inside. Give the young chefs lots of elbow room and tell them to take their time with this.

Ingredients
1/2 cup cream cheese, at room temperature
4 chives, 1 sprig of dill, and/or 3 basil leaves (optional)
2 eight- to ten-inch flour tortillas
1 tomato, seeded and sliced into thin rounds 6 spinach leaves

1. Place the cream cheese in a small bowl. For herb cream cheese, use scissors to snip the herbs into tiny pieces, then mash them into the cream cheese with the back of a spoon.

2. Spread a little cream cheese on each of the spinach leaves, then spread the remainder in a thin layer onto the tortillas. Place three tomato slices in a row down the middle. Top with the spinach leaves, cream cheese facing up.

3. Roll up each tortilla tightly into a log. Pinch the seams shut. Use a serrated knife to slowly slice each log crosswise into 5 or 6 pinwheel sandwiches. Serves 2 to 4.

Again in my quest for great tortilla recipes, I came across this one. This is a great recipe. I would personally leave the jalapeños out. My husband would beg to differ. lol. We've done something similar to this with doritos in place of the tortillas.

CHICKEN TORTILLA CASSEROLE  

3 cups cubed chicken
3/4 cup chicken broth
3 tbsp flour
1/4 cup butter
2 1/2 tbsp onions (chopped)
1 1/2 cup milk
1 1/2 oz jalepeno peppers
1 tsp salt
1 doz. tortillas, pulled into pieces, or taco chips
1/2 cup shredded cheese (preferably sharp)
1 1/2 cup chopped stewed/canned tomatoes

Melt butter, add onions and saute about 5 minutes. Add flour and cook till bubbly. Pour milk and broth in gradually, stirring until smooth. Add peppers and tomatoes and stir. In a large casserole spread a layer of meat, then tortillas or tacos and cheese, repeat until all is used up. Pour sauce over this and sprinkle with cheese over entire casserole.

Bake at 350F degrees for 1/2 an hour our until bubbly. Serve hot.

Okay, here's another one of my favorite Tortilla recipes.  This one is for Corn Tortillas!  My husband loves these.

Corn Tortillas


INGREDIENTS:
2 cups instant corn flour (masa harina)
1 1/3 cups warm water

PREPARATION: Heat griddle (preferably non-stick or seasoned iron) over medium heat and have ready. Mix corn flour and warm water to form soft dough. Pinch off pieces and form into smooth balls with the palms of your hands.

Keep remaining dough covered with a damp cloth to prevent drying. Open tortilla press and lay a plastic sandwich bag on the bottom half. Place ball of dough on the plastic, a little off-center, towards the hinge of the press. Place another sandwich bag on top of the ball and flatten slightly with your hand. Close the press firmly, then open. Dampen hands with a little water. Peel the top bag off the tortilla, then lift the bottom plastic bag up with the tortilla still on it. Transfer the tortilla, dough side down, to your dampened hand. With free hand, carefully peel the bag off the dough.

Note: If the dough is thick and grainy, a little more water may be needed. If it sticks to the plastic or your hand, it is too wet and a little more flour may be added. Always keep hands damp with water when handling dough.

Place the tortilla on the hot griddle and cook turning only once, like a pancake. This should take about 2 minutes.
